Potato and Spinach Soup

Great simple soup. Didn’t have much in the pantry and was hungry for some dinner. I used some leftover frozen spinach. Came out really delicious for how simple it is.

Potato and Spinach Soup

Ingredients:

1 Tbps. butter

1 onion, chopped

1 garlic clove, minced

thyme

4 cups water

1 potato, cubed

1 cup chopped spinach

Directions:

Heat butter in pot over medium low heat. Add onions and garlic and cook till just translucent about 10-15 minutes. Add thyme, cube potato, water and a pinch of salt and pepper. Boil then bring to a simmer for 20 minutes. Once potatoes are soft, using an immersion blender puree the soup. Add spinach and salt an pepper if needed.
