White Chocolate Macadamia Nut Cookies
2 dozen cookies
1 stick butter, softened
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 tsp. vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup coarsely chopped macadamia nuts
3/4 cup white chocolate chips
Preheat oven to 375 degrees. Beat together butter, both sugars, and vanilla, until creamy. Beat in the egg, until light and fluffy. Blend in flour, baking soda, and salt, until mixed. Stir in macadamia nuts and white chocolate. Drop dough by rounded teaspoonfuls onto ungreased baking sheets. Bake for 8-10 minutes, or until edges are golden brown. Cool on baking sheets for 2 minutes.
