Steak Tacos + Corn Salsa + Pico De Gallo

I actually was planning on making shrimp tacos, but some how making steak tacos. I found the thin sliced of rib eye on sale so marinated them and grill them using my George Foreman. Not the best grill I will admit but the steak ended up being good in taco form. I had leftover corn, thus corn salsa.

 

Steak Tacos

Ingredients:

1 lb. steak (whatever is on sale)

2 Tbs. olive oil

1 lime

2 tsp. chili powder

2 tsp. cumin

1 Tbs. hot sauce

corn tortillas

salsa

sour cream

avocado

Directions:

Put steak in a plastic bag with oil, lime juice, chili powder, cumin, hot sauce, salt and pepper. Let marinate for at least an hour. Place on grill and depending on the thickness of the steak, cook for a few minutes each side. Cut in strips serve on tortillas with salsa, sour cream, and avocado.

 

Corn Salsa

Ingredients:

1 Tbs. olive oil

½ red onion, chopped

1 cob of corn

1 jalapeno

Directions:

Heat oil over medium heat. Add onions, cook till translucent, about 5 minutes. Add jalapeno and corn and toss till cooked about 3 minutes. Add salt and pepper.

 

Pico De Gallo

Ingredients:

1 tomato, diced

2 green onions, sliced

½ jalapeno, diced

1 lime, juiced

1 Tbs. olive oil

Directions:

Mix everything together with salt and pepper and chill for 30 minutes.
