When I have leftover beans I love to make bean dip. I also had some leftover pesto which really made a delicious dip!
Dandelion Greens Pesto and White Bean Dip
Dandelion Greens Pesto (recipe here) or regular pesto
2 cups white beans (recipe here or canned)
2 Tbs. olive oil
Put all ingredients in food processor. Season with salt and pepper. Serve with crackers and pita chips.
