Dr. Seuss Deviled Eggs

This was the “D” potluck. D is more difficult πŸ™‚ So I only made two dishes and the other one sucked so I am only posting one. These were delicious πŸ™‚ I wanted to make a special deviled egg and these really hit the mark.

Dr. Seuss Deviled Eggs

Serves 12

Ingredients:

6 eggs

1 Tbs. mayo

2 tsp. Dijon mustard

2 Tbsp. dandelion pesto (see recipe below)

ham, cubed

Directions:

Boil water. Add eggs and boil for 10 minutes. Run under cold water. Peel eggs, cut in half and scoop out yolk. Mix yolk, with mayo, mustard and pesto. Season with salt and pepper. Garnish with a cube of ham.

Dandelion Greens Pesto

1 cup

5 minutes

Ingredients:

2 cups dandelion greens

2 cloves garlic

ΒΌ cup pine nuts

2/3 cup extra-virgin olive oil

Β½ cup parmesan cheese, grated

Directions:

Combine the greens, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add oil and process until fully incorporated and smooth. Season with salt and pepper.
