Citrus Ceviche on Cucumber

Potluck time again! This time the theme was “C”, so I made a citrus ceviche on cucumber. I feel just randomly put ingredients in the ceviche, but it ended up being really nice and refreshing.

 

Citrus Ceviche on Cucumber

20 Servings

Ingredients:

1 snapper fillet, sliced in small pieces

2 limes, juiced

1 orange, juiced

1 lemon, juiced

½ grapefruit, juiced

½ red onion, chopped

1 jalapeno, chopped

¼ cup cilantro, chopped

1 cucumber, diced

2-3 cucumbers sliced

 

Directions:

Mix fish with everything except  sliced cucumbers, season with salt and pepper, and chill for at least 1 hour in fridge. Place 1 tablespoon of mixture on cucumbers and garnish with extra cilantro.
