White Asparagus Quiche

I was really excited to find fresh white asparagus at my local grocery store. I love it as just a side dish, but it came out really good in this quiche. On the side I just had an arugula salad with some olive oil and lemon juice.

White Asparagus Quiche

Serves 4

Ingredients:

1 ¼ cups flour

1 stick of butter, cubed

Pinch of salt

Pinch of sugar

4 Tbsp. water

2 slices of bacon, chopped

½ onion, chopped

½ lb. white asparagus, ends trimmed and cut in thirds

5 eggs

1/3 cup cream

1 cup shredded cheese, swiss, gouda, or cheddar, whatever is in your fridge and melts

Directions:

Mix flour, salt and sugar. Add butter and mix until there are pea sized balls. Mix water and form the dough into ball. Put into freezer until ready to use. Heat pan over medium heat and cook bacon. Use bacon grease to cook onions until translucent. Add asparagus and cover for 5 minutes. Preheat oven to 450. Mix eggs, cream, cooled down veggies,  and cheese. Roll out pastry dough into a pie pan. Put egg mixture in pie and bake for 35 minutes.
