Asparagus Orzo

Asparagus Orzo

Ingredients:

1 Tbs. olive oil

½ onion, chopped

1 clove garlic, minced

½ lb. asparagus, cut in thirds

¼ cup Asiago cheese, shredded

3 Tbs. sundried tomatoes, chopped

Directions:

Boil water for orzo (add little oil and salt to water). Heat oil in skillet over medium-high heat. Add onions, cook till translucent, about 5 minutes. Add garlic and asparagus, cook till asparagus becomes tender, about 5 minutes. Add orzo to boiling water, cook for 9 minutest then drain orzo. Add asparagus, asiago cheese, sundried tomatoes, salt and pepper, mix well.
