Caramelized Onion and White Bean Dip

This was just a delicious accident. I wanted to make something with the leftover white beans I had. So I just roasted some garlic and caramelized some onions and mixed it up with the beans. It is so addictive. The olives give a great salty touch.

 

Caramelized Onion and White Bean Dip

Ingredients:

1 Tbsp. olive oil

1 Tbsp. butter

1 onion, sliced

1 whole garlic, top cut off

1 Tbsp. olive oil

1 tsp. sage, chopped or dry

1 tsp. thyme, chopped or dry

2 cups white beans, recipe here

3 Tbs. olive oil

chopped black olives

Directions:

Turn oven on to 400 degrees. Place garlic bulb in tin foil with olive oil salt and pepper. Place in oven for 30 – 40 minutes or until soft. Heat skillet medium heat with oil and butter. Add onions, thyme, sage, salt and pepper. Cook until caramelized about 20 – 30 minutes. Put onions, garlic, oil and white beans in food processor and pulse until fully incorporated. Put in container and top with chopped black olives.
