Baby Bean and Cheese Burritos with Broccoli, Bell Pepper Salsa

So this is the last thing I made for the B potluck. It turned out really good! The chipotle peppers make the beans really spicy then I served it with a cool broccoli salsa. The salsa may sound weird, but I actually enjoyed it. I reheated these burritos in the oven that is why on the picture they have a little color on them. Also I added some bacon to the beans but I think it was overkill so I left it out of the recipe.

Baby Bean and Cheese Burritos with Broccoli, Bell Pepper Salsa

12 servings

Ingredients:

1 Tbsp. oil

1 red onion, diced

1 can black beans

1 chipotle pepper, minced (add another if you like it spicier)

1 Tbs. cumin

Cheese (I used baby bell, but most melty cheese will work)

Flour tortillas

1 crown of broccoli

1 green bell pepper

1 tomatillo

2 limes

¼ cup sour cream

Directions:

Heat pot over medium high heat, add oil. Add onions, cook till translucent, about 5 minutes. Add black beans, chipotle peppers, and cumin. Bring to a simmer and let cook for about 20 minutes. Taste for seasoning and add salt and pepper. Cut flour tortillas in quarters, place a tablespoon of beans and cheese. Roll up and secure with toothpick. For sauce, boil salted water and add broccoli. Boil for 6-8 minutes. Broil bell pepper and tomatillo until charred. Add broccoli, bell pepper, tomatillo, lime juice, sour cream, salt and pepper to food processor and run till completely combined. Serve with burritos.
