Bratwurst , Boiled Potato, and Bacon Beer Braised Brussels Sprout Skewers

Another addition for the B potluck. I am really a fan of the skewers. These came out really good with the addition of a bit of mustard. You could use the braised brussels sprouts as a great side dish.

Bratwurst, Boiled Potato, and Bacon Beer Braised Brussels Sprouts Skewers

Serves 10

3 slices bacon diced

½ onion, diced

2 cups brussels sprouts, cleaned up

½ cup beer

10 small potatoes

1 lb. bratwurst

Mustard (Dijon)

Heat pot over medium-high heat. Add bacon. Cook till fat begins to render, about 5 minutes. Add onions and cook until translucent, about 5 minutes. Add brussels sprouts and sauté for a few minutes then add beer. Turn heat down and bring to a simmer. Cover and let braise for about 20 minutes or until brussels sprouts are soft. Boil pot of water with salt and add potatoes. Cook till soft about 20 minutes. Heat frying pan over medium heat and bratwurst, cook till brown all over about 10 minutes. To assemble skewer, add halved brussels sprout with a bit of bacon, halved potato and a slice of bratwurst with a dollop of mustard on top.
