Chicken Pot Pie


My boyfriend’s favorite meal! I make this on the regular, and it is delicious!

Chicken Pot Pie

Serves 4

1 hour 5 minutes


1 ¼ cup flour

1 stick of butter, cubed

Pinch of sugar

Pinch of salt

4 Tbsp. water

2 cups water

1 chicken breast

1 Tbsp. chicken bouillon

2 carrots, chopped

3 celery, chopped

½ onion, chopped

6 mushrooms, sliced

½ cup frozen peas

2 Tbsp. butter

3 Tbsp. flour

½ cup heavy whipping cream


Mix pie crust ingredients until butter is the size of peas, and then mix in water, put in freezer. Preheat oven to 400 degrees. In a pot boil water with chicken bouillon. Add chicken breast and boil until cooked, about 10 minutes. Add some butter to a pan over medium high heat and add carrots, celery, onions and mushrooms. Cook until tender about 10 minutes. Add peas. Make small hole in middle and melt butter, then add flour and mix until incorporated then mix with all the vegetables. Add stock from boiled chicken and heavy whipping cream. Cut cooked chicken into cubes and add to mixture. Keep over heat until sauce becomes thick, about 5 minutes. Put mixture in pie and top off with crust cutting a hole for the steam to be released. Put in oven for 25 minutes.
