An easy dinner for the night. Delicious fried chicken tenders with baked cherry tomatoes on the side. I served it with some bbq sauce to dip the tenders in. I feel I put too many breadcrumbs in my crisp so just adjust to how many tomatoes you have. The tenders are great with a bit of lemon squeezed on top.
1 ½ cups flour
1 ½ cups bread crumbs
6 chicken tenders
Heat oil in deep fryer to 350 degrees. Put flour, egg and breadcrumbs in separate bowls. Season flour with salt and pepper and whisk eggs. Put each piece of chicken in flour, then eggs, and then breadcrumbs. Place in deep fryer for 3-4 minutes until golden. Place on paper towels.
Cherry Tomato Crisp
1 pound (about 4 cups) cherry tomatoes
½ cup bread crumbs
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley leaves
1 tablespoon olive oil
1 clove garlic, minced
Preheat oven to 400 degrees. Combine bread crumbs, Parmesan cheese, parsley leaves, olive oil, and garlic. Season with salt and pepper. Drizzle an 8-inch square baking dish with olive oil, or spray with non-stick cooking spray. Arrange cherry tomatoes in a single layer and sprinkle with the bread crumb mixture. Bake until crust is browned and tomatoes are tender, 20 to 25 minutes.
