Zucchini and Potato Hash


Great breakfast side dish with a fried egg and either some sausage or bacon. It is great to use any left over veggies you have in the fridge.

Zucchini and Potato Hash

Serves 2


2 Tbs. olive oil

½ red onion, chopped

3 red potatoes, cubed

1-2 zucchini, cubed

1 tsp. paprika

1 tsp. chili powder

1 tsp. oregano

1 tsp. thyme


High over medium high heat oil. Add onions cook until translucent.  Add potatoes and zucchini and spices salt and pepper, cook until brown and soft. Add herbs and serve.
