Put this dish together with whatever I could find in the pantry/fridge. Thought it turned out so good I would post it! Enjoy 🙂 I also added a pesto recipe. I recently acquired a basil plant and it grows crazy so I have been making a ton of pesto.
Spaghetti with Pesto Cream Sauce
3 slices of bacon, sliced in small pieces
½ onion, minced
1 Tbs. flour
1 cup milk
¼ cup parmesan cheese, shredded
¼ cup pesto ( store bought or use recipe below)
1 cup cooked chicken (leftover or bake 1 chicken breast 350 15 minutes both sides)
½ cup frozen peas
½ bag of spaghetti
Heat bacon over medium heat until crispy, about 5 minutes. Add onions until translucent. Add flour and mix well. Slowly stir in milk and cheese until, and cook on low until sauce thickens. Add pesto, chicken and peas. Mix well and cook until everything is heated through. Boil spaghetti according to directions. Mix spaghetti into sauce.
2 cups packed fresh basil leaves
2 cloves garlic
¼ cup pine nuts
2/3 cup extra-virgin olive oil
½ cup parmesan cheese, grated
Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add oil and process until fully incorporated and smooth. Season with salt and pepper.
