Garlic Roasted Chicken



There is something about roasted chicken that is so comforting. This is a great way for your chicken to come out delicious, with moist meat and crispy skin. If you don’t mind chicken fat covered vegetables, those are so good too.


Garlic Roasted Chicken

Serves 6

1 hour 30 minutes


1 3-4lb whole chicken

6 cloves garlic, minced

5 Tbsp. butter, melted

1 lemon cut in half

3 carrots, chopped

3 celery stalks, chopped

5 gold potatoes, cubed

2 leeks sliced

1 onion, chopped coarsely


Preheat oven to 450 degrees. Spread half the garlic on the outside of the chicken and the other half in the cavity. Place halved lemon in cavity Baste the outside of the chicken with the butter and salt and pepper generously. Place vegetables in roasting pan and coat with oil salt and pepper. Place chicken on top breast side down. Roast for 25 minutes. Flip chicken so breasts are up for 50 more minutes. Let rest for 10 minutes before carving.
