Great simple recipe for a weeknight.
Pasta with Fire Roasted Tomatoes
2 lbs. medium tomatoes (10 to 12) halved lengthwise
½ cup olive oil
2 cloves garlic minced
1 Tbsp. Italian seasoning
½ tsp. crushed red pepper
8 oz. pasta fettuccine
Preheat oven to 400 degrees. Place tomato halves, cut side up, in a foil lined pan. Mix oil with garlic and seasonings in small bowl. Spoon over tomatoes. Roast for 45 to 60 minutes until tomatoes are soft and brown on top. Boil pasta according to directions. Coarsely mash half of tomatoes. Add all tomatoes to pasta and top with parmesan cheese and more red pepper.
