Italian Tuna Melt + Quick Veggie Pickle


This was a delicious lunch I made the other day. I wasn’t sure what to put in my tuna melt so I got creative and found some Italian inspiration and ingredients. I just had made some quick pickled veggies and thought that was a great addition. Add some potato chips and the side and you are set!

Italian Tuna Melt


¼ cup red onion diced

1 can of tuna, in oil

4 sun dried tomatoes, chopped

1 Tbs. capers

2 Tbs. mayonnaise

2 Tbs. chopped parsley

1 Tbs. balsamic vinegar

Slice of bread

Slice provolone cheese

Slice avocado


Mix onion, tuna, tomatoes, capers, mayonnaise, parsley, and vinegar in bowl. Spoon mixture on bread. Top with cheese and place in broiler for 5 minutes or until cheese has melted. Serve with avocado.

Quick Veggie Pickle


4 cups white vinegar

2 ½ cups water

½ cup sugar

2 Tbs. salt

12 thyme sprigs

6 bay leaves

4 garlic cloves, halved

2 tsp. black peppercorns

1 rosemary sprig

12 baby carrots

10 radishes, halved

1 red onion, sliced

1 cup cauliflower florets

¼ lb. green beans

1 yellow bell pepper, sliced


Combine vinegar, water, sugar and salt in large bowl. Stir until sugar and salt dissolve. Add thyme, bay leaves, garlic, peppercorns, and rosemary. Combine vegetables in very large bowl. Cover vegetables with vinegar mixture. Let sit for 4 hours chilled or up to a few days.
