Roasted Carrots with Red Onion and Sage

Very fall feeling side dish. The best way to cook carrots is to roast them.

Roasted Carrots with Red Onion and Sage

Serves 4

55 minutes

Ingredients:

8 carrots, cut in strips

1 red onion, sliced

2 Tbsp. olive oil

2 Tbsp. sage, chopped

Directions:

Preheat oven to 450 degrees. Place carrots, red onions, and olive oil into a baking dish. Season with salt and pepper. Bake for 40 minutes until carrots are tender. When carrots are done mix sage into the baking dish with the carrots.
