This is kind of weird recipe but I really enjoyed it. It works great with crackers!
2 Avocados, diced
1 tomato, diced
½ onion, diced
2 Tbsp. Olive oil
1 Tbsp. balsamic vinegar
¼ cup parsley, chopped
2 Tbsp. parmesan cheese, finely shredded
Mix everything along with salt and pepper. I served it on a cracker with a slice of mozzarella.
