These are extremely rich but really gooooood! I think I used too big of mushrooms, I think small mushrooms would be best. But if you love bacon, mushrooms and cheese then this is a great recipe.
12 whole fresh mushrooms
5 slices bacon, cooked and crumbled
¼ cup red onion, minced
1 (8 oz.) packages cream cheese, softened
1/2 cup dry breadcrumbs, divided
1/4 cup grated Parmesan cheese
¼ teaspoon ground cayenne pepper
Cook onions in bacon grease until soft. Preheat oven to 375 degrees. Clean mushrooms; break off stems and discard. Combine cream cheese, bacon, 1/4 cup of breadcrumbs, Parmesan, onion, cayenne pepper, salt, and pepper. Fill mushrooms with a generous amount of cream cheese filling. Dip tops in additional breadcrumbs and place on lightly greased baking sheet. Bake for 25-30 minutes until mushrooms are piping hot and liquid starts to form under caps.
