Italian Veggie & Sausage Lasagna



The ever tasty lasagna. This has to be one of the best dishes created. It makes everyone  happy and is relatively easy to make, and even better as left overs. Here is my take on lasagna.


Italian Veggie & Sausage Lasagna

1 ½ hours

Serves 6


½ package lasagna noodles

Olive oil

1 onion, chopped

1 zucchini, chopped

2 carrots, chopped

8 oz. mushrooms

1 package of Italian sausages

1 clove garlic

1 16oz can tomato sauce

4 cups ricotta

1 egg

2 cups spinach

8 oz. mozzarella, sliced

Parmesan cheese


Preheat oven 375 degrees. Boil water add oil and salt. Add lasagna noodles and cook for 12 minutes. After you pull them out oil them more so they don’t stick. Heat pan over medium high heat and add oil. Add onions, zucchini, carrots and mushrooms. Cook till soft, about 10 minutes. Add Italian sausage with casing, and heat till cooked through about 5 minutes. Add garlic. Then add tomato sauce, heat for another 5 minutes. Mix ricotta with egg and spinach. Begin layering lasagna, first sauce on bottom, then noodles, ricotta, sauce, noodles, ricotta, sauce. Then end with noodles, sauce, sliced mozzarella and sprinkle some parmesan cheese. Heat in oven for 45 minutes and let rest 15 minutes after.
