Egg & Asparagus Salad Sandwich

I love egg salad! Especially when the egg yolk is just a tad runny. So here is one I made with whatever I could find in the fridge. It ended up being way better than expected.

Egg and Asparagus Salad Sandwich

Serves 2

Ingredients:

2 eggs

5 spears of asparagus

4 Tbsp. mayonnaise

1 Tbsp. Dijon mustard

2 Tbsp. chopped onion

3 sundried tomatoes, chopped

Splash of hot sauce

Slice of baguette

Directions:

Boil some water. Add eggs in for about 6 minutes. Pull out and put in cold water. Add asparagus to boiling water cook only for like 4 minutes. Add these to cold water too. When eggs have cooled down enough peel and chop. Cut asparagus into thirds. Add all ingredients except baguette into a bowl and mix well and salt and pepper. Toast baguette and top with mixture.
