Beer-Battered Fried Zucchini + Ranch Dressing

Love fried zucchini and had to bust out the fryer! With something fried you need to dip it, so I did my best to scrape together some ranch dressing. Also fried a pickle in the batter and that turned out great.

Beer-Battered Fried Zucchini

Serves 8


2 zucchinis cut like fries

1 cup flour

¾ can light beer



Italian Seasoning


Heat fryer to 375 degrees. Mix flour, beer, salt, pepper and Italian seasoning. Dip zucchini sticks into the batter and then straight into the fryer. Depending how big the fryer is do a few at a time. Place in a bowl lined with paper towels. Serve with marinara sauce or ranch dressing.

Ranch Dressing

Makes 1 cup


¾ cup mayonnaise

¼ cup milk

2 Tbs. red wine vinegar

1 clove of garlic minced

1 Tbs. dried dill

1 tsp. Italian seasoning

1 Tbs. minced onion




Mix all ingredients together.
