Pan Seared Rib Eye Steak + Parmesan Hasselback Potatoes + Broccoli

Hooray first post! Made a delicious meal the other night. With this recipe from Alton Brown the steak came out perfectly! I wanted to try to make hasselback potatoes which I had never tried before. Everything came out awesome expect for maybe the picture. I will try harder in the future to take better pictures :p Definitely recommend both theses recipes though.

Pan-Seared Rib Eye

Ingredients

1 boneless rib eye steak, 1 1/2 inches thick

Canola oil, to coat

Kosher salt and ground black pepper

Directions

Let steaks come to room temperature. Coat steaks with canola oil, salt and pepper. Heat skillet over high heat till really hot.

Immediately place the steak in the middle of the hot, dry skillet. Cook 30 seconds without moving. Turn and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip the steak and cook for another 2 minutes.

Remove the steak from the skillet, cover loosely with foil and rest for 2 minutes.

This will give you a perfect medium rare steak!

Parmesan Hasselback Baked Potatoes

Makes 2 servings

Ingredients :

2 medium potatoes, cleaned (Russet)
2 cloves garlic, minced
3 tablespoons olive oil
pinch of salt
pinch of black pepper
pinch of paprika
grated Parmesan (have some additional for sprinkling as a garnish)
chopped green onions

sour cream, optional

butter, optional

Directions :

Preheat oven to 425˚F with rack in the middle of the oven. Lay potatoes flat on cutting board and starting from one end of the potato, make slits about 3-4mm apart. Cut to about 1/4 inch from the base of the potato. Be careful not to slice all the way through. The potato will fan out a bit as it bakes.

Combine olive oil, garlic, salt, pepper and paprika in a small bowl. Carefully brush each slit of the potatoes with the olive oil mixture, using a pastry brush. Rub potatoes with residual oil. Arrange potatoes on baking sheet and bake for about 40-45 minutes.

Garnish with additional salt, paprika, pepper, Parmesan and green onions. Serve with sour cream and/or butter, if desired.

And also on the side I boiled broccoli just for a few minutes and sauteed it quickly with some olive oil, salt and pepper.
